Dad's Chicken Pot Pie

Dad made this every winter Sunday. He used leftover rotisserie chicken and frozen vegetables — never apologized for the shortcuts. Said the pie crust was where the love went. He'd roll it out on the counter with Mama's rolling pin and crimp the edges with a fork. I still have that rolling pin.

Ingredients
- 1/3 cup butter
- 1 onion, diced
- 2 stalks celery, diced
- 1/3 cup all-purpose flour
- 1.5 cups chicken broth
- 2/3 cup whole milk
- 3 cups cooked chicken, shredded

Melt butter, cook onion and celery until soft. Add flour and stir 1 min. Pour in chicken broth and milk, cook until thickened. Add shredded chicken, frozen peas and carrots, salt, pepper, thyme. Pour into pie dish. Top with rolled pie crust, cut slits, brush with egg wash. Bake 400 for 35-40 min until golden and bubbling.
